A quick, delightful and easy dish anchored by my pesto recipe. Combine the bread of your preference, Mortadella, parsley, and a great amount of Bea’s Pesto for a sublime sando. Toast the bread to perfection, add mortadella and parsley once you’ve spread the pesto, and enjoy.
Bea’s Pesto:
- 1 1/4 cup bunch of parsley or carrot tops
- 1 avocado
- Pistachios
- Peppercorn
- Olive oil
- Garlic
- Salt
- Lemon juice and zest
- Pepper flakes
- 1 tsp vinegar
